Brisk Restaurant

Brisk is a contemporary restaurant in the heart of Corfu Old Town, created by chefs and owners Spyros and Michalis Varangoulis. Its concept brings together the simplicity and welcoming character of a neighbourhood taverna with a more refined restaurant approach, placing strong emphasis on ingredients, technique and flavour.

The kitchen uses seasonal Corfiot produce alongside carefully selected Greek ingredients, quality meats and seafood. Grilling over coals, slow roasting and smoking feature prominently, while handmade pasta and long-fermentation sourdough bread are also part of the restaurant’s approach. The menu combines recognisable Greek and Corfiot influences with more contemporary interpretations, with dishes such as handmade pappardelle with slow-cooked beef cheeks, shrimp orzotto, moussaka ravioli, fish with savoro sauce and tiroloukoumades appearing on the current menu.
